One of my favourite childhood summer meals was a creamy vegetable soup with fresh potatoes and lots of dill! I was fortunate that we grew up where we could grow most of our own food. The rest we gathered from local farmers and as a last resort – the grocery store. The foothills area is rich with fresh produce, grown right here! Honey, organic grains, berries, root vegetables, organic meats, herbs – so many colourful foods – so many fresh meal options. Find a local farmers’ market and get munchin’!!!
